Spring has officially arrived at JUSTIN which is also our unofficial start of wedding season. The temperate weather, rolling oak studded hills, and ease of travel to get here make Paso Robles Wine Country the perfect place for a destination wedding. We hosted our first wedding of the year this last Saturday at the JUSTIN Chateau, nestled in the hills above our estate vineyards. I slipped away from the Tasting Room to take a quick peak at the Chateau and was delighted with the transformation. I am planning my own wedding this year and was looking for inspiration. The Chateau setup was absolutely breathtaking- perfect weather with clear blue skies made for a beautiful and dramatic backdrop. I followed my nose into the warm and inviting Chateau kitchen where Chef Will Torres and his team were preparing the culinary creations that the guests would enjoy later- King Salmon with creamed nettles, mushroom conserva, fresh micro thyme, and Prime flat iron with polenta, Negi onion, blue cheese butter, and smoked tomato jus. YUM!
As I made my way down the hill back towards the winery, I couldn’t imagine anything better than a gorgeous evening, award- winning wines, and incredible food to bring two families together. Now to start on my wedding plans…
